Saint-Émilion Grand Cru 1er Grand Cru Classé A AOC 2021 Château Ausone

Château Ausone is one of the rare wineries in Bordeaux to have belonged to only 3 families over the centuries. It has been owned by the Dubois-Challon-Vauthier family since the 17th century and is now run by Alain Vauthier and his daughter Pauline. The Chateau Ausone Saint-Emilion Grand Cru 1er Grand Cru Classé A is part of the noble appellation Saint-Émilion Grand Cru AOC, which is divided into 3 categories of wines or in 3 quality levels: Saint-Émilion Grand Cru Classé, Saint-Émilion Premier Grand Cru Classé and Saint-Émilion Premier Grand Cru Classé A.

Following the strictly manual harvest, the cold maceration of the grapes takes place. Subsequently, the must is vinified in 54 hl oak vats at a controlled temperature, while for aging the wine rests in new French oak barriques for 20 to 22 months.

In the glass the wine appears of an intense ruby red color with purple hues. On the nose there are hints of violet, cooked plums, blueberries and orange, with dark notes of coffee powder and chocolate. The sip is concentrated, enveloping and structured, with ripe and well perceptible tannins and a long persistence.

Ideal in combination with goose terrine, roasted lamb shoulder with aromatic herbs, but also with baked larded pigeons and caramelized red onions.
