Description
The Château Canon rises above the old limestone quarries that run through the subsoil for hundreds of meters and which still connect some Château to each other today. They constitute the ideal environment for the conservation of the precious Bordeaux wines.
For the production of the Château Canon, temperature-controlled steel vats of various sizes are used. This allows the differentiated and optimal vinification of the vineyard plots. Subsequently, the assembled wine is aged in French barriques, 50-60% of which are new, for about 18 months.
In the glass the wine appears of an intense ruby red color. The olfactory profile alternates aromas of ripe red fruit and plum with mineral hints, with a smoky and licorice note. The sip is enveloping, with silky tannins and a long finish.
Ideal in combination with rich lasagna with meat sauce, including wild boar, and with roasted noble poultry. It is advisable to let the wine settle for at least 3 hours before serving it.
