Description
The Saint-Aubin 1er Cru Clos de la Chatenière stands out for its almost 60-year-old vines, which produce a wine that year after year is confirmed as an exemplary of depth, flavor and mineral impact. The extremely pebbly soil is located on a steep slope, with a limestone subsoil that contributes to the tension and freshness of the wine, while the southern exposure of the vineyards favors high levels of maturity and concentration of the fruit.
A long and careful aging process, which avoids the use of new wood and extends for almost 2 years, of which 10 months in tanks for further refinement, allowing the wine to express both a generous and incisive character.
On the palate, Saint-Aubin presents itself with a pale gold robe with green reflections, exhibiting a complex nose of toasted bread, sun-warmed stone, apples, peaches, plums, dried white flowers and a subtle touch of honey. The mouth is wide and structured, supported by an acidity that maintains a perfect balance, revealing itself to be savory, deep and with a long and incisive finish, characterized by notes of citrus fruits and sea salt.
This wine pairs wonderfully with dishes such as crab salad, ceviche, roasted scallops and soft cheeses.
