Description
Rully "Vieilles Vignes" is an elegant white wine from the village of Rully, located in the north of the Côte Chalonnaise, between Mercurey and Santenay. The vines, with an average age of 40 years, grow on clay-limestone soil with a predominance of limestone, which gives the wine its typical freshness and minerality.
The vinification of this Rully begins with a manual harvest and careful selection in the vineyard, followed by pneumatic pressing for slow extraction. After a light decantation, the must is placed in 500 liter French oak barrels (10% new), where alcoholic and malolactic fermentation takes place with indigenous yeasts and bacteria. The refinement on the fine lees lasts 15 months, without batonnage, with a final decanting into stainless steel tanks before bottling, which follows the lunar calendar.
On the palate, the Rully "Vieilles Vignes" is fruity, lively and round, with a pleasant fatness and a long persistence. Aromas of hawthorn, honeysuckle, elderberry, white peach and flint can be perceived, which give the wine a unique complexity and elegance.
This wine pairs perfectly with some types of fish, hot shellfish, mature cheeses and poultry.
