Description
The Rosso di Torgiano Auravitae by Tenute Baldo is the result of a perfect balance between Sangiovese, Merlot, and Cabernet Sauvignon, grape varieties that combine to create a harmonious and enveloping wine. Hailing from the gentle hills of Torgiano, it emerges from a careful selection of grapes and cultivation practices aimed at enhancing concentration and expressiveness.
The manual harvest is followed by a temperature-controlled vinification with spontaneous fermentation and a 15-day maceration, allowing for optimal extraction of aromas and structure. After malolactic fermentation in steel, the wine matures for six months in French oak barrels, then completes its evolution with further resting on fine lees in steel and three months of refinement in the bottle.
With a bright ruby red color, it opens on the nose with delicate floral notes of violet and fresh rose, followed by hints of small black fruits such as blueberry, currant, and cherry. Vegetable aromas of bell pepper and rosemary intertwine with nuances of underbrush and damp earth, creating a complex and intriguing bouquet. On the palate, it is balanced and refined, with elegant and well-integrated tannins, a lively freshness, and a persistence that invites another sip.
It pairs beautifully with grilled meat dishes, structured first courses, and aged cheeses.
