Description
Rosso di Montalcino by San Polo comes from Podernovi, south of the municipality of Montalcino.
It is produced with only Sangiovese grapes, manually harvested in small boxes in the last days of September, with careful selection of grapes for grapes. Fermentation is carried out in concrete tanks at a temperature of 28-30 °C for 14–16 days. Subsequently, the mass is transferred to French oak tonneaux where it performs malolactic fermentation and ages for 12 months before being bottled.
Bright ruby red in colour, it expresses fruity hints of morello cherry and blackberry, enriched by a pleasant vanilla touch. On the palate, it is warm and medium-structured, with well-integrated tannins and a good persistence of aromas.
Perfect with mushroom or truffle risotto, it goes well with grilled red meats and medium-aged cheeses.
