Description
Rosso di Montalcino di Caparzo is a wine made with Sangiovese grapes from the north and south of Montalcino, expression of different locations of the appellation: Caparzo, Il Cassero and San Piero-Caselle.
The grapes are separated from the green parts and then sent to fermentation in steel tanks at a controlled temperature of 28-30 °C for 7 days. Being in contact with fine marc, it is preferred to extend the maceration period for another 5 days, followed by spontaneous malolactic fermentation. Aged for 12 months in Slavonian oak barrels.
In the glass, it has an intense and concentrated ruby color. The nose is intense and broad, with opening on floral notes of violet sweet which leaves room for fruity hints of raspberry and pomegranate. On the palate it is warm and dry, with a good balance.
