Description
It comes from the Salento Bascià di Notte Rossa, from land located at an altitude of about 100 meters above sea level: it was born from grapes that enjoy the exposure to the mild climate of this splendid land with clayey and shallow soil.
It is harvested in September. The grapes are harvested by hand, the cold pre-fermentation maceration with subsequent start of the alcoholic fermentation at a controlled temperature. Refines in oak barrels following malolactic fermentation.
The color is ruby red tending to purple; the nose is intense and complex, with fruity notes of plum and jam and spicy hints that remind us of vanilla and licorice. It envelops the palate with an intense sip, of great structure and softness, with a long finish.
We like it in combination with full-bodied first courses, preferably from the land such as red meats and game. It is a meditation wine.
