Description
Olmatello is an evocative monumental pine forest overlooking the San Cristoforo valley. This Romagna Sangiovese originates from the vineyard located in the homonymous area, obtained from a selection of grapes with the best exposure to the sun and harvested at the best degree of ripeness. On the label stands a sprig of dogwood, a very long-lived plant that goes well with this large Sangiovese Reserve.
The must ferments in steel after which the maturation takes place in oak barrels of first, second and third use for 24 months. Follow assembly and ageing in bottle for at least 6 months.
It has an intense ruby red colour with slight garnet reflections. A considerable olfactory complexity externally, with fine hints of dried fruit and a riot of spices reminiscent of tobacco, licorice and leather, with hints in the finish of roasted coffee. On the palate it is deep and warm, with evident and well integrated tannins that accompany an elegant and enveloping finish.
It is ideal in combination with red meats and medium-long aged cheeses.
