Description
Enio Ottaviani's Romagna Sangiovese "Dado" comes from the Romagna region, precisely from the San Clemente area in Rimini, which benefits from the influence of the Adriatic Sea. This position of the vineyard, with exposure to the south, south-east, together with the clay-loam soil, endows the wine with characteristic brackish and mineral notes.
Produced exclusively with Sangiovese grapes, the harvest is entirely manual. Fermentation takes place in concrete tanks, while refinement continues in large barrels.
To the eye it stands out for its ruby red color, pale but extremely brilliant. The nose is caressed by an explosion of red fruit, in particular ripe sour cherry, which is beautiful, crisp and clean. On the palate, the wine is juicy, with a hint of pomegranate juice, enriched by a mineral finish and salty tannin.
This wine pairs wonderfully with rich and tasty dishes, such as rigatoni amatriciana with Mora Romagnola bacon, roasted eel, chicken with peppers, and grilled mutton ribs. Combinations that particularly enhance the characteristics of this wine.
