Description
The Sangiovese from Noelia Ricci is born on the hills of San Cristoforo in Predappio, at an altitude of 250 to 300 meters, on soils composed of ochre clays and limestone marls. The vines, trained in the Guyot system, come from plantations established in 2002 and give life to an authentic and territorial Sangiovese.
The harvest is done manually in the second decade of September, with grape selection in crates. The different clones of Sangiovese are vinified separately in temperature-controlled steel tanks, with skin maceration lasting about 18 days. This is followed by malolactic fermentation without fining or filtration, to maintain the expressive purity of the grape variety. The aging takes place 80% in steel and 30% in concrete for 8 months, followed by at least 4 months of resting in the bottle.
Of bright ruby red color, on the nose it expresses a floral and dynamic bouquet, with notes of red flowers such as rose and geranium, accompanied by light spicy nuances. The taste is fresh, smooth, and flavorful, with an energetic and fine tannic structure that provides balance and drinkability.
It pairs perfectly with cured meats and salami, fish soup with tomato, roasted and grilled meats, white meats, and risotto with meat.
