Description
This red wine is born in vineyards located in various municipalities in the DOC Roma area, cultivated on volcanic, pozzolanic and sandy soils of the hilly areas influenced by sea winds. It is produced with Montepulciano, Cabernet-Franc and Merlot grapes, respecting the percentages indicated in the specifications.
The vinification involves maceration and fermentation at a controlled temperature, followed by racking and soft pressing of the marc. The refinement takes place in barriques of different origins for about a year, before bottling and marketing.
Dark and bright ruby red in color, it offers intense and complex aromas of ripe red fruit and cherries in alcohol, with spicy notes of mace, cardamom, cinchona and black pepper, accompanied by hints of Mediterranean scrub, red flowers and an elegant balsamic touch. On the palate it is soft and structured, with fine tannins, a refined balance and an almost endless persistence.
Perfect when paired with first courses of pasta with game ragù, grilled red meats, furred and feathered game, medium-aged cheeses or traditional Roman dishes.
