Description
Fincas de Ganuza from Remírez de Ganuza is made with a blend of Tempranillo and a small part of Graciano, sourced from vineyards located at the foot of the Sierra Cantabria, in Rioja, with vines aged between 25 and 40 years.
The harvest is done manually, with the grapes collected in crates and cooled for 24 hours in cold rooms at a temperature of 4-6 °C. The winemaking process begins with a manual selection of the bunches, separating the best parts (the so-called "hombros") which are then destemmed. Fermentation takes place in stainless steel tanks and in cement vats of various sizes. The wine then ages for 25 months in French oak barriques, half of which are new and half second passage.
In the glass it presents a deep ruby red color. On the nose it offers a complex bouquet of ripe red fruits, sweet spices and toasted notes of wood and vanilla. On the palate it is well balanced, with velvety tannins and a long persistence, enriched by nuances of cocoa and tobacco.
It pairs perfectly with red meat dishes, roasts and mature cheeses.
