Description
Dominio del Águila Reserva is a red wine from Ribera del Duero, Spain, produced by the Dominio del Águila estate, founded by Jorge Monzón and his wife Isabel Rodero. This wine is made from a blend of Tempranillo, Albillo, Bobal and Garnacha Tinta, from very old and organic vineyards located in the municipality of La Aguilera.
The grapes are harvested with a rigorous manual selection of the best bunches and fermented with indigenous yeasts in concrete vats. The winemaking process involves aging for 35 months in French oak barrels, followed by bottling without fining or filtration to preserve the purity and integrity of the wine.
On the nose it surprises with intense aromas of ripe red and black fruit, combined with notes of wild herbs and a hint of minerality. On the palate it shows a complex and silky structure, with juicy tannins and a long and persistent finish. It is an elegant and well-balanced wine, with a remarkable aging capacity that allows it to be kept for another 10-12 years.
Perfect to pair with red meat dishes, such as a roast leg of lamb, it can be enjoyed immediately or left to mature in the cellar for an even more intense experience.
