Description
Dominio do Bibei Lapola is a white wine produced in Ribeira Sacra, Galicia, by the Dominio do Bibei winery. This wine is made with a blend of Godello, Albariño and Doña Blanca grapes. The grapes come from vineyards with schistose soils between 15 and 80 years old, located in difficult cultivation terrain, harvested manually to ensure the highest quality of the fruit.
The vinification involves fermentation in cement tanks and wooden foudre, followed by aging for 7 months in French-Austrian oak barrels and a further 6 months in stainless steel tanks. This process, without stabilization or filtration, allows the characteristics of the wine to be kept intact, enhancing its freshness and structure. The wine ages on fine yeasts, developing aromatic complexity.
The nose reveals citrus aromas of lemon and lime, accompanied by notes of white fruits, with floral touches and hints of wild herbs. On the palate it is fresh and light, with a creamy texture and a well-balanced acidity that makes the wine lively and dynamic. The finish is long and persistent, leaving a mineral sensation.
This white wine pairs perfectly with appetizers, seafood, grilled white fish or creamy risottos.
