Description
Lalama is a red wine produced by Dominio do Bibei in the Ribeira Sacra region of Galicia, Spain. Made from a blend of indigenous grape varieties including Mencia, Garnacha Tintorera, Mouratón, Sousón and Brancellao, this wine reflects the uniqueness of the terroir characterized by steep terraces overlooking the Atlantic Ocean. The vineyards are located on steep slopes, with soils rich in slate, granite and clay, which give freshness and minerality to the wine.
Each variety is harvested separately. The grapes are destemmed and selected, then macerated for 2 days before starting fermentation in open French oak barrels and truncated cone-shaped wooden vats. Manual punching down is done and the wine is racked manually. The subsequent malolactic fermentation takes place in smaller barrels, with a full refinement of 18 months and a final touch of 5 months in the bottle.
On the nose it offers a riot of fresh red fruits such as raspberries and cherries, along with hints of spices and notes of vanilla. On the palate this wine is balanced and deep, with soft tannins and a long and persistent finish that leaves a pleasant sensation.
Lalama pairs perfectly with dishes such as risotto, veal carpaccio, roast chicken or grilled vegetables.
