Description

The still red wine Lacima del Dominio Do Bibei is produced in the Ribeira Sacra region of Galicia. Made exclusively from 100% Mencia grapes, this wine is an authentic expression of the Ourense terroir, where the cool climate and fragmented slate soils, with variations of sand and gravel, help create a unique and distinctive aromatic profile.

The winemaking process involves fermentation on indigenous yeasts in French oak barrels, followed by malolactic fermentation in smaller barrels. The wine is then aged for 10 months in old French oak barrels, naturally cold-stabilized over the winter, and finally bottled without filtration to preserve its integrity. It then rests for a further 16 months in the bottle, allowing it to develop greater complexity and aromatic depth.

On the nose, Lacima reveals intense aromas of fresh red fruit, mineral notes and spicy touches that evoke flint and aromatic herbs. On the palate it is elegant and vibrant, with a fine tannic texture, lively acidity and a persistent and mineral finish.

This red wine pairs ideally with white meat dishes, grilled red meats or cheeses.
