Description

El Palomar is a white wine produced by Bodegas Zarate in the Rías Baixas of Galicia, Spain. Made with 100% Albariño grapes from a 150-year-old vineyard, the oldest in the region, located on granite soils 50 meters above sea level. The roots of the vines penetrate deeply into the rock, giving the wine a distinct minerality.

The harvest is manual and involves a rigorous selection. After destemming, the grapes are subjected to a long and delicate pressing, with a low yield of must. Fermentation takes place in French oak barrels, with an age of 15 years. During maturation, the wine remains in contact with its fine lees for 9 months, without racking until the end of the spontaneous malolactic fermentation.

It has a bright golden yellow color. The nose opens with intense aromas of white-fleshed fruit, followed by mineral notes and spicy nuances due to the aging in wood. In the mouth it is fresh, with a marked flavor, a balanced structure and a long finish that highlights the characteristic minerality of the terroir.

This white wine pairs perfectly with baked fish dishes or shellfish.
