Description
Balado is a white wine produced by Bodegas Zarate in the Rías Baixas of Galicia, Spain. It is made with 100% Albariño grapes from two small parcels of 60-year-old vineyards located 50 meters above sea level. The soil is granite and shallow, and is poor in organic matter.
The harvest is manual and involves a rigorous selection of the grapes, which after destemming undergo a long and delicate pressing. The must, after a slight clarification, ferments spontaneously in steel tanks, where it remains in contact with the coarse lees for 3 months. It is then racked and refined cold on the fine lees for a further 6 months, without batonnage or malolactic fermentation.
It has a straw yellow color with golden reflections. On the nose it expresses itself with intense aromas of ripe white fruit and mineral notes, while in the mouth it is very fat and broad, with a rich and complex structure. The freshness and well-integrated acidity guarantee a long persistence and great capacity for evolution in the bottle.
This white wine pairs perfectly with raw fish or seafood dishes.
