Description
Doc Ermete's Reggiano Secco Assolo comes from the vineyards of Tenuta I Quercioli, located in the province of Reggio Emilia.
It is produced from Ancellotta and Lambrusco Salamino grapes, which ferment spontaneously in steel tanks, with interruption of the process once the desired alcoholic strength has been reached.
It is characterized by a bright and intense ruby red color. The perfume is characteristic and of good persistence, with hints of red fruits and blackberry. The sip is dry and balanced, with a good liveliness that gradually reveals a pleasantly almondy finish.
This sparkling red combines well with grilled meats or pizza. It is also ideal in combination with cured meats and aged cheeses.
