Description

Recioto della Valpolicella Classico from the Farina company is a sweet and traditional wine from the Valpolicella Classica. Produced from selected Corvina, Rondinella and Molinara grapes, which come from the hills of Negrar, characterized by calcareous and gravelly soils. It is obtained by choosing only the “recie” of the bunch, that is, the sweetest and sparsest part.

After manual harvesting, the grapes are subjected to a natural drying process for about four months. The vinification involves cold maceration and slow fermentation in stainless steel. The process includes cleaning racking to maintain the residual sugar, followed by six months of aging in steel and six months in the bottle.

The color is intense ruby red, with a fruity and floral scent that evokes violet, wild rose, raspberries and black cherry jam. On the palate it is velvety, sweet but never cloying, with a soft and pleasant taste.

Perfect as a dessert or after-dinner wine, it pairs well with dry pastries, fruit tarts, chocolate and blue cheeses such as Gorgonzola.
