Description
Paolo Leo Puglia Primitivo IGT Passitivo was born from the project to vinify the grapes of the sapling vineyards after a natural drying on the vine for 12 days, obtained following the so-called "giro del Picciolo", a choking of the stem of the bunches when they are perfectly ripe .
The delicate pressing of the grapes allows the concentration of color, and the frequent pumping over and delestage allow to obtain the maximum of aromas and soft tannins. The creation of this masterpiece in the bottle is completed by maturation in American and French barriques for 12 months.
This wine has the intensity of the Apulian summers, from the intense ruby red color to the fruity and juicy aromas of small ripe red fruits, black cherry, raisins and vanilla. Full and satisfying on the palate, it has the right balance between soft tannins and a pleasant freshness, with a finish to remember, rich and juicy, of freshly picked overripe fruit.
Enjoy this complex red with rustic and rich in flavor dishes, such as meat sauce with sausage, mushrooms, cold cuts and cheeses, grilled red meats, horse stew and chops with sauce.
