Description
This Primitivo Bio of the Doppio Passo brand is a tribute to Carlo and Maria Botter who, together, founded the company in 1928, building it step by step, day after day, working together to achieve a common goal.
The wine is an organic Primitivo made from 100% Primitivo grapes, which are harvested in two phases. Once in the cellar, the first part of the grapes are de-stemmed and vinified with 7-8 days of maceration on the skins. Alcoholic and malolactic fermentations take place in steel tanks at a controlled temperature (25-27 ° C). The second part of the grapes is left on the vineyards for another 10 days in order to have a late harvest; these grapes follow the traditional red vinification. The wine obtained from the first part of the grape carries out a second fermentation on the pomace of the second grapes harvested.
Intense ruby red color, the nose reveals aromas of ripe red and black fruit, blackberry and cherry. The sip is structured, with soft tannins well balanced with acidity.
The Primitivo Bio Doppio Passo pairs very well with grilled white and red meats, steak with grilled vegetables and aged cheeses.
