Description
The Nero di Troia from the Notte Rossa winery is produced in Alta Murgia with Nero di Troia grapes vinified in purity.
With vineyards located at approx. 180 meters above sea level and raised on soils composed mostly of clay and skeleton, it is harvested in mid-October. After arriving in the cellar, the grapes macerate at a controlled temperature before undergoing fermentation with selected yeasts for at least 10 days. This is followed by aging in French and American oak barrels for 6 months before bottling.
Ruby red in color of great intensity, it offers cherry and blackberry jam to the nose as well as floral notes of violet. The taste returns toasted notes of wood and cocoa and a pleasant spiciness, before a dense and delicate tannic texture highlights the elegant structure. With a long sip, it maintains a good freshness and ability to mature over time.
Perfect in combination with savory first courses such as pasta with sausage and timbales of grilled vegetables, it also goes very well with semi-seasoned cheeses and second courses of grilled meat.
