Description
Negroamaro La Pruina comes from grapes full of color and aromas of the wonderful sun-kissed land of Salento. The word "bloom" refers to the light dust that forms naturally on the grape skins, which prevents the berries from dehydrating and is particularly evident in the vines later in life.
Once the manual harvesting operations are completed, the grapes are transported to the cellar and subjected to the crushing-destemming phase. Fermentation takes place at a controlled temperature with maceration on the skins for 8-10 days, interspersed with periodic pumping over. After the malolactic fermentation, the wine is left to age for 10-12 months in American and French second passage oak barrels.
It has a ruby red color with purple reflections. The bouquet of aromas is expressed with intense fruity and spicy notes, among which black currant and berries, licorice and tobacco stand out. The sip is full-bodied and velvety, with a savory and persistent finish.
Ideal companion of elaborate first courses, it excellently accompanies grilled meats and medium-aged cheeses.
