Description
Paolo Leo's Primitivo Puglia is a red wine from the rural area of Sava and Manduria, located in the province of Taranto. The vines are grown on medium-textured soil. The harvest is carried out manually in the last ten days of August in small 5 kg boxes.
Winemaking begins with destemming of the grapes, followed by fermentation in stainless steel tanks at a controlled temperature of 22-24°C for 8-10 days. The process includes daily pumping over, followed by malolactic fermentation. The wine ages in steel for 5 months, preserving the freshness and liveliness of the Primitivo.
This wine has a ruby red color with violet reflections. On the nose it offers fragrances of cherries and small red fruits such as blackberries, mulberries and raspberries. On the palate the taste is round and enveloping, characterized by a fine freshness that makes it balanced and pleasant to taste.
This Primitivo pairs perfectly with the dishes of historic Apulian cuisine, enhancing meatballs in sauce and baked parmesan with its complexity and structure.
