Description
Paolo Leo's Primitivo Rosato is a wine from the Puglia denomination, produced in the rural area of Manduria and Sava, in the province of Taranto. This rosé is obtained exclusively from Primitivo grapes, grown with the spurred cordon training system on medium-textured soils.
The harvest is carried out manually in the last ten days of August, after which the grapes undergo a short cold maceration of 5-6 hours to extract delicate aromas and flavours, followed by soft pressing. Fermentation takes place at a controlled temperature of 15-16°C and the wine matures for 3 months in steel.
Cherry pink in color with bright reflections, this Primitivo Rosato offers the nose hints of flowers and red fruits such as cherries and raspberries. On the palate it is soft and with a well-calibrated freshness, for a pleasant and fruity finish.
This rosé pairs perfectly with friselle from Salento and cherry tomatoes seasoned with Apulian extra-virgin oil, enhancing the simplicity and tasty aroma of the dish.
