Description
Negroamaro Paolo Leo is a red wine bearing the Puglia denomination, produced in the rural areas of San Donaci and Salice Salentino. It is made exclusively with Negroamaro grapes, grown on medium-textured soils. The harvest is carried out by hand in the early hours of the morning, guaranteeing the freshness and aroma of the product.
After harvesting, the grapes are destemmed and the crushed grapes ferment in steel tanks at a controlled temperature between 22-24°C for 8-10 days. This is followed by malolactic fermentation and a five-month maturation in steel, helping to maintain the freshness and aromatic integrity of the wine.
This wine has an intense ruby red color with violet reflections. On the nose it offers fragrances of ripe red fruit, blackcurrant jam and raspberries, with notes of well-ripe plums that fade into spices of black pepper and cinnamon. On the palate it exhibits a pleasant volume, with well-balanced tannins and a structural freshness, accompanied by a spicy finish.
This Negroamaro is ideal for accompanying dishes based on richly flavored meats, such as braised meats and wild boar ragù, and is particularly suitable with structured cheeses and spicy cured meats.
