Description
The vineyards from which Paolo Leo's Primitivo di Manduria Giunonico are grown are those of Sava, in the province of Taranto.
It is produced only from Primitivo grapes, whose harvest takes place by hand in the early hours of dawn. The must is left to ferment for 8-10 days at a controlled temperature of 25 ° C, with a maceration on the skins for 12-15 days. The wine rises in wooden barrels for 20 months, then refines another 4 months in steel and 3 months in bottle before being released on the market.
Wine with a dark garnet red hue with purple reflections, wraps the nose with intense aromas of blackberry and black cherry. In the mouth it has a soft and full taste, with a long aftertaste.
Excellent in the company of red meats and game dishes.
