Description
Portofino Metodo Classico Abissi di Bisson is a sparkling wine that comes to life in the Pestella area, in Trigoso di Sestri Levante, in the province of Genoa. It can be produced with Bianchetta Genovese, Vermentino or Pigato grapes depending on the year, harvested early by hand.
Once the fermentation process is complete, which takes place in steel tanks at a controlled temperature, the base wine is sent to the second fermentation process, which takes place by immersion inside stainless steel cages, at a depth of 60 meters in the seabed of the Baia del Silenzio in Sestri Levante. It rests for 18 months at a controlled temperature of 15°C before being fished out and subjected to the traditional disgorgement with topping up of the same product.
It is characterized by an intense straw yellow color and a fine and persistent perlage. On the nose it releases a bouquet with a character that ranges between musky and salty. On the palate it is dry and long, pleasantly mineral.
Ideal throughout a meal, this Brut sparkling wine is excellent with refined fish-based dishes.
