Description
Reine Pédauque's Pommard is a fine French wine produced exclusively with Pinot Noir grapes, grown in the heart of the Côte de Beaune, in the village of Pommard, characterized by clay and limestone soils with rocky debris that favor excellent drainage.
The harvest is carried out manually, followed by traditional vinification in thermoregulated stainless steel. The process includes a cold pre-fermentative maceration, a long fermentation with frequent pumping over and punching down, and a post-fermentative maceration at 30°C for 5 days. The wine then ages in oak barriques for 8 to 16 months, using 40% new wood.
It has a deep red color with ruby reflections. On the nose there are elegant notes of red fruits that blend with hints of toasting and spices. On the palate, the wine reveals itself to be broad and generous, with tannins clearly present on the finish which promise to evolve beautifully, adding complexity with ageing.
Ideal in combination with grilled red meats and sauces, beef steak, lamb or poultry stews, it also goes perfectly with cheeses with a strong flavor such as Epoisses, Langres, Soumaintrain, Livarot, Pont-l'Évêque and Comté.
