Description
The Pommard 1er Cru Les Chaponnières from the Parent domain is an excellent example of Pinot Noir, grown on clay-limestone soils in the renowned Pommard area. This wine demonstrates the domaine's ability to produce wines that deeply reflect the character of their terroir.
The manual harvest precedes a pre-fermentative maceration at low temperature for 3-5 days. Fermentation takes place at a controlled temperature for 18-20 days, followed by aging in partially new oak barrels for 14-16 months.
It has a lively ruby red color. On the nose it offers spicy hints of liquorice which combine with fruity notes of strawberry and cherry, creating a rich and inviting olfactory experience. The palate is generous and full, with a well-balanced structure and elegant tannins that lead to a clean and persistent finish.
It is ideal in combination with red meats and game-based recipes.
