Description
The Vieux Château Certan is a renowned Bordeaux wine from the Pomerol appellation, located on the Right Bank of the Bordeaux wine region, in the municipality of Pomerol, department of Gironde. Despite being unclassified, Vieux Château Certan has long been recognized as one of the region's great wines, sometimes compared to nearby Château Pétrus.
The winemaking process of Vieux Château Certan involves malolactic fermentation in barrels for the Merlot, while the Cabernet Franc is vinified at 30 degrees Celsius and subjected to malolactic fermentation in tanks. On average, the wine is aged in 50% new French oak barrels for approximately 20 months, depending on the character and quality of the vintage. Annual production varies from 4,000 to 5,000 cases per harvest.
With a brilliant ruby red colour, it releases a wide and rich range of aromas on the nose, with notes of black fruits, violet and truffle together with spices, chocolate and wet earth. On the palate it is soft and refined, supported by silky tannins and elegant fruity returns, which give it an incredible aromatic persistence. These characteristics make it a true expression of the Pomerol terroir, with a complexity and depth of flavor that distinguish it as one of the region's legendary wines.
It goes best with classic meat dishes such as veal, pork, beef, lamb, duck, game, roast chicken, as well as braised and grilled dishes. It is also excellent in combination with Asian dishes, hearty fish dishes such as tuna, mushrooms, pasta and a wide variety of cheeses, both hard and soft.
