Description
The Pinot Noir produced by Pegasus Bay comes from the Waipara Valley, an area close to the southern coast.
Well sheltered from the cold currents and rains coming from the north, the vines grow on poor soils with good drainage, presenting a contained vigor and ensuring very concentrated bunches. After the harvest carried out in different phases due to the different degree of ripeness of the bunches, 40% of the grapes are vinified with whole bunches. A few days of maceration allows the slow extraction of tannins from the skins before fermentation begins. A variable period of subsequent maceration allows the extraction of other tannins before the wine is transferred to oak barrels for 15 months before bottling.
Bright ruby red in color, it offers the nose hints of black cherry, plum with spicy and floral touches. Structured palate and finished with red fruits, it has a compact texture and a pleasant tannic silkiness before revealing a long finish.
Ideal wine to accompany first courses of meat sauce or roasted meat with herbs, it is also suitable in combination with cold cuts and cheeses or truffle paté.
