Description
Coppo's Monteriolo Piemonte Chardonnay is produced in the ideal pedoclimatic conditions of Piedmont, where the south-southeast exposure and the clay-limestone marl soil with a prevalence of silt favor the optimal ripening of the grapes.
The harvest takes place in September, with a careful selection of the healthiest and ripest grapes, and harvested by hand. This is followed by soft pressing of the grapes and fermentation in barrique which helps to develop the aromatic complexity and structure of the wine. The refinement continues in barriques on the yeasts with frequent batonnage.
Visually it presents itself with a bright straw yellow which anticipates its olfactory qualities, characterized by notes of exotic fruit such as mango and banana, integrated by fresh vegetal sensations of green pepper. On the palate, the wine reveals a balanced structure, supported by a fresh and clear acid vein, which gives dynamism and gustatory persistence.
It pairs beautifully with dishes such as tagliatelle with porcini mushrooms, pan-fried rabbit and vegetable dips. Its freshness and structure make it an ideal companion to accompany such dishes, enhancing their flavours.
