Description
Since 2010 Château Les Carmes Haut-Brion belongs to Patrice Pichet, the CEO of the Pichet real estate group, who bought it at a cost of 3.8 million euros per hectare. Like most of the new wineries, the cellar of Château Les Carmes Haut-Brion was designed for vertical vinification, in which each phase uses the force of gravity, without the use of pumps.
The vinification of the grapes takes place in whole berries in containers of different make and size, that is of wood, steel and concrete. The malolactic fermentation is carried out in wood, at the end of which the wine is assembled and aged in new French oak barrels for about 18 months.
In the glass the wine appears of a lively purple red. The nose reveals hints of violet, cherries and black fruits in addition to notes of tobacco and lavender. The taste is dry and elegant, with fine tannins and long persistence.
Château Les Carmes Haut-Brion goes perfectly with dishes based on red meat and game, even slightly spiced.
