Description
Le Dauphin d'Olivier Grand Vin de Graves is produced by Château Olivier within the Pessac-Léognan appellation.
The wine is a blend of Merlot and Cabernet Sauvignon. The grapes are vinified in thermocontrolled steel tanks for 3 weeks. The aging takes place in French oak barriques, 35% new, and lasts 12 months.
Brilliant ruby red in colour, it reveals toasted and red fruit aromas to the nose. The sip shows a good structure and has a delicately vanilla finish.
It goes very well with baked pasta with beef or game ragout and with stewed and roasted meats.
