The Clarence de Haut-Brion, which comes close in elegance and style to the Château Haut-Brion, offers an excellent introduction to the red wines of Domaine Clarence Dillon. This second wine, initially called Château Bahans Haut-Brion, was renamed Le Clarence de Haut-Brion in honor of Clarence Dillon, who acquired the property in 1935.
Winemaking follows methods that guarantee deep attention to the maturation and evolution of the wine. The blend is mainly composed of Merlot and Cabernet Sauvignon, with small percentages of Cabernet Franc. Maturation takes place in 33% new barriques.
Tasting Clarence reveals an intensely deep color with red reflections. The initial olfactory bouquet shows evident fruit maturity, which intensifies and becomes richer in complexity with oxygenation. On the palate, the wine is tasty and full, evolving on fine and compact tanins, leaving an impression of freshness without heaviness and with a notable volume of wine.
This wine pairs beautifully with robust and structured dishes, such as grilled red meats, richly flavored stews and mature cheeses. Its complexity and structure make it an ideal companion for elegant dinners and special occasions, where it can brilliantly accompany and enhance a wide range of flavours.
