Description
Can Sumoi's Xarel lo is a natural white wine produced at 300 meters above sea level in the area of Costers del Montmell, Spain. The grapes come from vineyards grown on sandy and gravelly soils, in an environment that favors the authentic expression of the grape variety. The winery's philosophy is based on respecting ancestral traditions, without the use of oenological additives, to create wines that reflect the territory.
Vinification is done by destemming and soft pressing in an inert atmosphere, followed by low-pressure pressing. Alcoholic fermentation takes place in stainless steel tanks with indigenous yeasts, while malolactic fermentation occurs spontaneously. Bâtonnage is performed twice a week for three months, contributing to the complexity of the wine. No stabilization or filtration is performed.
On the nose it offers fresh aromas of citrus, white flowers and a hint of aromatic herbs. On the palate it is mineral and well structured, with a pleasant acidity and a persistence that recalls sea salt and citrus notes.
It pairs perfectly with seafood, vegetarian dishes and fresh cheeses.
