Description
Pauillac 5ème Cru Classé is produced by Château Pédesclaux, a winery located in the Médoc on the Left Bank, in the Bordeaux region. The Château was founded in 1810 by Pierre Urbain Pedesclaux, from whom it takes its name. Its vineyards have a privileged position, as they look towards the Gironde estuary.
The grapes are vinified separately, starting with a cold maceration (8 ° C) of 10 days, followed by fermentation in 58 steel vats ranging from 50 to 150 hl. The malolactic fermentation takes place both in French oak barriques (30%) and in steel. Finally, 60% of the wine is aged for approx. 12 months in new French oak barrels.
Ruby red in color, the nose opens to a complex bouquet of small black fruits, currants above all, then to the spicy notes of cinnamon, anise, licorice and black pepper. The sip is structured, elegant, with very fine tannins and a long finish.
Ideal in combination with stewed red meats, including game and aged cheeses.
