Description
Nizza di Cascina Valle Asinari is a red wine of great elegance and power, produced with 100% Barbera grapes grown in the Asinari Valley, in San Marzano Oliveto, Piedmont. This denomination represents the maximum expression of Barbera d'Asti, with vineyards located at an altitude of 300 meters, on sandy and loamy soils with southern exposure.
The vinification involves spontaneous fermentation with indigenous yeasts in concrete tanks for about 12 days. After racking and pressing, the wine returns to the concrete tanks for malolactic fermentation. Aging takes place for 12 months in large Slavonian oak barrels, followed by a further 6 months in concrete tanks, for a total refinement of at least 18 months before release to the market.
It has a deep ruby red color with brick reflections, an indication of aging. On the nose it offers an intense bouquet of red fruits, pepper and undergrowth. In the mouth this wine is elegant and powerful, with a vibrant acidity that enhances its freshness and a long and persistent finish.
This Nizza pairs perfectly with roast meats, braised meats and mature cheeses.
