Orthogneiss from Domaine de l'Ecu is a white wine produced in the Loire region of France. This wine is made from Melon de Bourgogne grapes grown on pebbly soils with metamorphic orthogneiss subsoil. The vineyards have an average age of 50 years and are managed by Fred and Claire Niger.
The winemaking involves soft pressing, spontaneous fermentation and aging on the fine lees in underground cement vats. This process gives the wine a notable freshness and complexity.
Orthogneiss has a fresh, subtle and elegant taste, with notes of citrus and iodine. It demonstrates considerable evolutionary potential, expressing the minerality of its terroir.
This wine pairs perfectly with fresh anchovies, seasoned with oil, garlic, lemon and parsley, enhancing its freshness and mineral complexity.
