Description

The Monthélie 1er cru "Les Clous" by Pierrick Bouley is an excellent example of Pinot Noir coming from a small area of 0.60 hectares, characterized by marl on gravelly limestone, with south-southeast exposure. This unique terroir helps create a distinctive, high-quality wine.

The manual harvest and careful selection of the grapes are followed by sulphur-free vinification to preserve the aromas of fresh fruit. Fermentation begins quickly, with precise control of density and temperature. After pressing, the must is left to decant to eliminate the solid parts and then placed in tanks for the start of alcoholic fermentation. Subsequently, the wine is transferred to barrique for 12 months, with the addition of a little SO2 to stabilize it before bottling.

This wine presents magnificent aromas of fresh fruit, thanks to sulphur-free vinification. The maturation in barrique gives complexity, with notes of delicate spices and a silky texture in the mouth. The balance between acidity and tannins is ideal, making the Monthélie 1er cru "Les Clous" a wine of great elegance and persistence.

Thanks to its structure and complexity, it pairs perfectly with red meat dishes, game and mature cheeses. Its finesse also makes it suitable for special occasions, where it can enhance the flavors of refined cuisine.
