Description
Monica di Cagliari Superiore Iselis di Argiolas was born in vineyards located within the Iselis estate, in the Cagliari area of Serdiana.
It is produced entirely with Monica grapes, harvested and selected only by hand. Fermentation takes place, with maceration for 10–12 days, in steel at a controlled temperature of 28-30 °C. After the malolactic fermentation, carried out in vitrified concrete jars for 10–15 days, the wine matures for 12 months in barrique, followed by a further ageing of 6 months in bottle before being placed on the market.
It has a ruby red colour. The nose opens with intense and enveloping aromas of morello cherry and plum, enriched with pleasant notes of vanilla and cinnamon. On the palate, it is soft and balanced, with hints of red fruit and well balanced spices and sweet tannins that accompany a long and pleasant finish.
Perfect to accompany pasta with sauce and fish-based soups, it is ideal in combination with stewed lamb, grilled red meats and medium-aged cheeses, in particular with pecorino.
