Description
The Monica di Sardegna Oltreluna di Pala is produced only from Monica grapes coming from the Su Staini Saliu area, located in the municipality of Serdiana in Southern Sardinia.
The harvest is manual and is carried out in the early hours of the morning. The winemaking process involves fermentation, with maceration on the skins, at a controlled temperature for 10 days, the completion of malolactic fermentation and a subsequent 3-month refinement in barrels.
It presents itself to the eye with a dark ruby red color. The nose is intense and vinous, characterized by aromas of plum and morello cherry jam, completed by elegant spicy notes of leather, black pepper and toasted coffee. In the mouth it is full-bodied and enveloping, with elegant and soft tannins and a long-lasting finish.
This wine is particularly suitable for accompanying appetizers, soups and medium-aged cheeses.
