Description
This rosé sparkling wine from Costa Arente is produced from a typical red grape variety of Valpolicella, the Molinara. It is a complementary vine in the production of the most famous wines of this area, Amarone and Valpolicella Ripasso.
It consists exclusively of Molinara grapes, which are introduced whole into the press with the addition of dry ice, to bring the temperature to 7-8°C. After pressing and static clarification, fermentation takes place in steel at a controlled temperature of 12-13 °C. The second fermentation takes place in an autoclave with the Martinotti method, where the wine ages sur lies for 5 months, followed by refinement in the bottle for at least 2-3 months.
Antique pink in colour, it reveals intense aromas of peach and pomegranate, with notes of bread crust. The sip has a good structure, decisive and highly drinkable.
Perfect both as an aperitif and in the company of raw fish and vegetarian risottos.
