François Montand's Méthode Traditionelle Demi-Sec Blanc de Blancs Ice is a fascinating example of sparkling wine produced in France, where the relatively light clay-limestone soils lend themselves excellently to the cultivation of white grapes, ideal for creating wines intended for fermentation in bottle.
This wine is the result of mechanical harvesting and a careful blend of different varieties of white grapes, including Pinot Blanc, Chardonnay, Pinot Noir and Pinot Meunier. Fermentation takes place at low temperatures, followed by refinement in the bottle in a horizontal position for 9 months before disgorgement, thus ensuring the maturation of the aromas and the formation of fine bubbles.
It stands out for its pale gold color with a hint of green and for its fine bubbles. On the nose, it reveals intense aromas of white flowers and citrus fruit. In the mouth, the wine is pleasantly creamy and smooth, with persistent aromas that make it sweet, soft and harmonious.
