Description
The Vie Cave of the Marchesi Antinori was born in the vineyards of the Aldobrandesca Farm, in Tuscany, in the Southern Maremma.
It is produced entirely from Malbèc grapes, harvested and selected only by hand. The grapes, de-stemmed and softly pressed, are introduced into stainless steel tanks. Subsequently the grapes are cold macerated with lowering of the temperature of the product between 5 and 10 ° C, for about 3 - 4 days. The must heats up and is fermented in contact with the skins for about 7 days, at temperatures not exceeding 30 ° C. The wine concludes its malolactic fermentation in French barriques. Vie Cave ages in wood for about 10 months after which it is bottled and aged in the bottle for a further 8 months.
Vie Cave is characterized by an intense and deep ruby red color. The nose opens with fruity notes that leave room for spicy notes, cloves and vanilla. On the palate it is balanced, soft and pleasantly persistent, with particularly sweet tannins. The aftertaste, dominated by hints of blueberry and ripe black fruits, is accompanied by light notes of bitter chocolate.
It is perfect to combine with stewed meat recipes and grilled red meats.
