Description
Cogito R is a red wine made from Grenache di Mirizzi grapes, originally from Monte Roberto, one of the most renowned areas of the Castelli di Jesi for wine production. The vineyard is located 300 meters away between the Apennines and the sea. The soils are composed of calcareous sandstone marl with little clay.
The winemaking is traditional, with maceration on the skins for three weeks and thermal control of the cap at around 25°C, followed by delicate punching and sinking of the cap through the weight of the wine during pumping over. The refinement takes place in cement vessels, which gives the wine a distinctive character and great refinement and structure.
This wine has a lively ruby red color, with a delicate and defined aroma of blueberries, rose petals and Mediterranean scrub. On the palate it offers a very balanced sip between softness and warmth, with velvety tannins and a long persistence.
Cogito R is an excellent pairing for noble poultry dishes and red meats of all types.
