Description

The Mâcon AOP by Reine Pedauque is an elegant expression of the Gamay grape variety, grown on the reliefs of the Mâconnais mountains in France. This region is known for its siliceous-clayey or sandy soils, often mixed with stoneware pebbles, which give the wine unique characteristics.

The winemaking follows classic methods in stainless steel tanks with thermal control. The process begins with a cold pre-fermentation maceration at around 8°C, followed by pressing and pumping over to extract color and structure. Fermentation reaches a peak temperature of around 30°C, with a subsequent post-fermentation maceration at 25°C. The refinement continues in the tank for 8-16 months, including malolactic fermentation, ensuring a perfect balance between complexity and freshness.

Visually, the Mâcon AOP presents itself with a deep, intense ruby hue. On the nose, it expresses an expressive bouquet of black fruits such as cassis and blackberry, enriched with spicy nuances. In the mouth, it is crisp with fresh fruit flavors and is supported by fine tanins, culminating in a fresh and pleasantly persistent finish.

This wine pairs beautifully with a variety of antipasti dishes, tapas, pizzas, terrines, and a fine selection of charcuterie. It is also the ideal accompaniment for soft cheeses such as Camembert and Brie, as well as goat cheeses.
